但甘草水果的保质期只有1天,丰收季的李子总不能烂在枝头,这时就必须讲到我们潮汕地区的凉果。凉果是指将各种瓜果经腌制、糖(蜜)熬煮式浸渍、干燥后制成的产品,始于唐宋,那时的潮汕盛产瓜果,为了延长瓜果的赏味期,潮汕人便开始用糖、盐和各种调料腌制、浸渍将其制成果脯或果干保存起来,李子也可以制作成不同口味的凉果。老一辈的潮汕人家,许多奶奶们都会掌握着一些做凉果的独家秘方,可惜我们家没有留下做凉果的方子,这几天上网学习了,还有结合实践,终于琢磨着用青李做成了酸甜甘香,绵软肉感的李子干,就连我家那个不爱吃零食的理工男,也吃了好几个。

【食材】李子1500g、腌制盐150g、白糖600g

1. 李子尽量选比较红的,熟透的,用清水冲洗干净。

2. 加入腌制盐,反复揉搓,将李子的皮搓柔软,再加入清水浸泡1个小时以上。

3. 将浸泡好的李子用清水冲洗干净,用厨房纸擦干水分。

4. 将李子用小刀顺着李子的核,一分为三,将李子切成片。

5. 将白糖加入李子中,放入冰箱冷藏保存,腌制72小时,中间取出来看看,将上面的李子翻到下面,确保所有的李子都能腌制到。

6. 将腌制好的李子干取出,沥干水分。

9. 时间到,取出烘干好的李子,开吃。

【小五碎碎念】

我烤李子的温度设置60℃,时间8个小时,烘干出来的李子带有水分,吃起来比较绵软湿润,但这样的李子干存放的时间比较短,而且后期的保存最好放冰箱。
